lemon zest

za'atar

1 tbsp za'atar

feta

8 oz feta

lemon juice

1 tsp lemon juice

greek yogurt

¼ cup greek yogurt

water

1 tbsp water

pepper

1 tsp pepper

salt

1 tsp salt

olive oil

2 tsp olive oil

red beet

Instructions

1. Preheat oven to 450F.
2. Remove stems and cut beets in half. Season with salt, pepper, zaatar, and olive oil. Wrap in foil and bake for 1 hour.
3. In a food process mix together feta, yogurt, lemon zest, lemon juice, and water. Blend until smooth.
4. Once the beets are cooked, slice, toss with more zaatar and lemon juice.
5. Smear whipped feta on plate and top with beets. Season with salt, lemon juice, and mint.
